|-Boneless breast of chicken (a few full breasts, cut into thick strips - organic is always preferable)
-One yellow zuchini (sliced about 1/4" thick)
-One green zuchini (sliced about 1/4" thick)
-Baby green spinach
-Cherry tomatoes (halved)
|_Middle eastern, or lebanese cucumbers (sliced and quartered)
-Green onions (chopped)
-Fresh coriander/cilantro (finely chopped)
-Olive oil (extra virgin, 1st cold pressed)
|Marinade the chicken in a mixture of olive oil, dijon & honey. Coat the zuchini strips lightly in olive oil, add some sea salt & fresh ground pepper.
Prepare plates by throwing together (in order) the baby spinach, cucumbers and chopped green onions.
Grill the chicken, and at the same time grill the zuchini - itís important not to overcook! Summer Chicken at The Pond No one like likes dry chicken - or bitter zuchini. The zuchini will take less time to cook than the chicken. Pile the zuchini strips on the baby spinach, and the chicken on the very top. Sprinkle with the cilantro and garnish with the cherry tomatoes. Drizzle the whole thing lightly with balsamic, olive oil, mustard and honey vinaigrette. Enjoy!
