2 C. peeled jicama,cut into match stick size strips
3 small red,yellow and green bell peppers,cut into matchstick sizes strips
1 small red onion,thinly sliced
Jalapeno Dressing
1/4 c. peanut oil or olive oil
1/3 c jalapeno,seeded and chopped if you dont' like it hot
1 clove garlic,minced
1 tsp. sugar
1/8 tsp black pepper
dash of salt and cayenne pepper
Cooking Instructions:
Place vegetables in bowl.

Mix up the dressing ingredients in a jar.

Add to salad,coat well and chill to meld flavors.

EAT :)
Serving Suggestions:
Great as a solo side dish.May be added to chicken sandwiches.In spring rolls.On top of tortilla soup or other thick soups.
Additional Comments:
make a double batch of dressing for salad!
