2 T olive oil
2 T butter
1/4 cup flour
1/2 medium onion, minced
10 cloves garlic, minced
1 lb jack cheese, cubed
1 cup milk
4 lbs chopped spinach
1 T Worcestershire sauce
salt to taste
cayenne pepper to taste
bread crumbs
Cooking Instructions:
Over high heat, melt butter and olive oil together.

When butter stops bubbling (do not let it brown), add flour and whisk thoroughly for 5 minutes.

Add onions and garlic and cook for 5 minutes, stirring constantly.

Add water in small amounts, whisking constantly, until a slightly thick paste forms.

Add cheese and whisk until cheese is melted.

Add milk and Worcestershire sauce and stir.

Add spinach. Stir with large spoon until cheese mixture and spinach are mixed well.

Add salt and cayenne pepper to taste.

Before serving, pour into casserole dish, cover with bread crumbs, and bake in 400 degree oven until crumbs are toasted.
