1 1/4 C. lentils
20 small cherry tomatoes
1 C. chopped red onion
1/2 c. chopped trimmed radishes
1/2 c chopped parsley
1/2 c. chopped kalamata olives
3 TBSP. drained capers
8 TBSP Olive Oil
1 Yellow bell pepper ,chopped
3 TBSP fresh lemon joice
8 oz Feta cheese ,crumbles
chopped hard boiled eggs
Cooking Instructions:
Cook lentils until tender.Drain and place in bowl.Mix in tomatoes,onion,radish,parsley,olives and capers.

Heat 2 Tbsp. oil ,add bell pepper and saute 5 minutes.Transfer to lentils and oil left in pan to a measuring cup...then add enough oil to make 1/2 cup.Whisk in lemon juice,season with salt and pepper.Add dressing to salad,toss,mix in Feta and garnish with eggs.
Additional Comments:
I could not get myself to add the eggs to this dish!
